La Luna e le Torri, Vernaccia di S.Gimignano DOCG
This concentrated but smooth dry white wine's name means 'The Moon & the Towers'.
Only 2,000 bottles of this top selection of the best Vernaccia (85%) and Sauvignon Blanc (15%) grapes are made each year.
The grape juice ferments for one lunar month in small oak casks. The wine is then aged on its own fermentation yeast deposit, or lees, until late summer, then it is bottled. The lees ageing period enhances the Vernaccia grape's bright straw yellow colour and broadens then refines its piercing flavours.
Mineral and spice notes become especially noticeable. Ageing this dry white wine further in bottle accentuates its inherent power, depth, ripeness and complexity.
